Grilled Chicken Sandwiches with Goat Cheese, Spinach, Caramelized Onions & Mushrooms


I know it may appear that we never repeat the same meal in our house - but here’s a secret- we do! Since chicken is kind of blah (I’m bored with it just thinking about it) I find it is more exciting when it’s sandwiched in between some deliciously charred bread & smothered with toppings. Then it’s almost like you’re not eating the chicken at all. What’s even better is that you can make these sandwiches with simple ingredients & you get to eat them with your hands!

Savory Egg, Leek, Herb & Goat Cheese Crêpe Squares

I love making crepes. Albeit they take some practice so if you don’t get them on the first try keep trying, you will. Plus, eating the mistakes is a great perk! I made these for brunch this weekend. I’ve also made this version of them for brunch with my girl friends a while back (like last year!). They’re great to make ahead & to serve at room temperature. They also look super posh & make for a completely satisfying breakfast, lunch or dinner.

Zippy Zucchini Bites

I made these zippy zucchini bites for my coworker's birthday (along with these). I call them zippy zucchini bites because I couldn’t remember the name from the original recipe I found on Pinterest when my coworkers asked me what they were. I called them zippy because they have sweet mint, spicy harissa, zesty lime & tangy goat cheese all rolled up into one little tasty bite, hence the original name. To me that warrants the name zippy, which is also just fun to say & who doesn’t love some alliteration(? <— nerd alert).

I’d make these again. You can make them ahead of time. I chilled mine overnight & then served them at room temperature. I think they’d be a perfect fresh bite for pre-Thanksgiving appetizers because they’re not heavy & really easy to eat! They're also gluten-free & a great non-carb to have on the table. Plus, any kind of rolled appetizer always looks super pretty & fancy, so your guests will be super impressed.

Caramelized Onions, Mushrooms, Spinach & Goat Cheese Pasta

Kristin from Beauty Counter posted a photo of this onion mushroom pasta dish on her Facebook page the other day & I was inspired to try it although I didn’t follow the recipe exactly. I went off the ingredients that I had on hand plus a suggestion my cousin, Christy Ann made to add pasta water & goat cheese for a simple yet creamy pasta sauce.  Thanks for the inspiration ladies! I really liked what evolved from these ideas & I think you will too!

I don’t eat a ton of meat - so Chris doesn’t really either because we eat together. I do however always try to have some sort of protein in our meals. Eggs are a great protein & usually really quick to make for breakfast, lunch or dinner.

Last week I boasted about my first successful poached egg experience. As I was going through my photos* & I found some of these tomato sauce poached eggs that I actually made a month or two ago - sorry I fibbed a bit on the poaching because I in fact had poached before! I feel like poaching eggs in tomato sauce is a bit more forgiving & might be the gateway poaching method you need to get your feet - err eggs (?) - wet.


*I photograph pretty much everything I make - sometimes these photos make the blog & sometimes they just collect on my hard drive.

Simple Cheese Plate at Home

I live on cheese, olives & wine.  It might be one of my favorite ways to spend the happy hours of the day.  Cheese plates seem so chi-chi but really they are incredibly easy to whip up & enjoy.  I put this cheese plate together while we were waiting for our dinner to finish cooking. I think the best way to make a good cheese plate is to combine salty with sweet with a variety of textures. I love olives, but Chris does not, so for my salty element I used some garlicky dill pickles.  I used two cheeses, one hard (parmesan that I shaved with a veggie peeler) and one soft (goat cheese that I cut into crumbly rounds).  My sweet element was fresh clementine segments.  I always love something I can spread so I used the last of the spinach & kale pesto that I had made.  A delicious vehicle for this spread is just as important. Lucky for me there's a bakery around the corner. Even luckier for me, I have a husband who was willing to grab some fresh bread.  Cheese plates are of course delicious with wine.  I know there's a whole sommelier science behind it but I say, drink what you like in good company & if the weather permits - enjoy it all outside.

Roasted Veggies & Goat Cheese Pizza


If you read this blog on the regular you might be noticing a pattern with pizza.  I'm really into making pizza dough to have on hand for dinner. The possibilities are endless & plus, who doesn't like pizza? 

Chris brought back one of the largest butternut squashes I've ever seen from the farmer's market so I felt the need to incorporate that into a dinner & in this case a pizza.  I'm not going to lie, you have to put some work in to get what you want out of a butternut squash. It's pretty hard so zap it in the microwaved before you attempt to cook it. Since mine was on the larger side I microwaved it for about 5 minutes. Then you can cut it in half length ways.  It has some seeds in it that you'll need to scoop out. There is also a pretty tough shell on this veggie so you'll need to peel that off.  Now you're ready to chop. Do your best to make even sized pieces. The smaller the pieces the quicker they will cook. I only used half of the squash for this recipe but I chopped up the rest of it & sealed it in a food storage bag for use later in the week - which mean less prep time for round two.

My favorite part of this pizza is smearing the warm goat cheese all over it when it comes out of the oven. The tang from the goat cheese & the sweetness of the roasted veggies is dinner worthy!

Truth be told I'm not a huge Valentine's Day fan, but I do love incorporating graphic design elements into my daily life & food. This weekend I whipped up some birds in a nest (an oldie but goodie) but jazzed it up with some heart shaped cutouts.

Root Vegetable Stuffing with Fall Fruit

I cannot believe Thanksgiving is next week already, that means time to start planning sides & desserts.  I watched Giada make a version of this stuffing that is both sweet & savory & thought I'd give it a test run before the big turkey day.  I'd say it was a hit, according Chris & me of course.

I love stuffing but I really do not like any type of meat in it - sausage, gizzard, no thanks.  I loved this recipe because it has hearty root veggies plus the sweetness of fall fruit. It's kind of like a dinner cobbler - too savory to be dessert but just sweet enough to make you want seconds.

This particular recipe calls for goat cheese for a tangy extra creamy zing but if you don't like goat cheese (Maggie I know what you're thinking) you can just leave it off, but if you love goat cheese like Chris & me, you're in for a real treat.

Goat Cheese Flatbread

Ingredients:
  • 2 large onions
  • 3 shallots
  • 3 tablespoons olive oil
  • 1 cup fresh goat cheese
  • 2 cups arugula
  • 4 pieces trader joe's whole wheat tandori naan bread
Dressing:
  • 1 lemon (juice + zest)
  • 3 tablespoons olive oil
  • salt & pepper
Jane is one of my favorite places in NYC to eat. They have killer bloody marys & excellent bites. I basically took this flatbread right off their menu. It's so simple but so so tasty & holds a special place in my memory book.

There are two distinct times in my life when I remember savoring this at Jane. The first time was with my mom, right after we had finalize THE fabric that my wedding dress would be made from. The second was the day before my rehearsal dinner for my wedding, with my sister. This flatbread makes my heart & belly warm & of course it helps that you-know-who (my hubby!) likes it too!
