Truth be told I'm not a huge Valentine's Day fan, but I do love incorporating graphic design elements into my daily life & food. This weekend I whipped up some birds in a nest (an oldie but goodie) but jazzed it up with some heart shaped cutouts.
If you are keen on Valentine's Day this is a great way to start your romantic day.

Ingredients:
- 2 slices of bread
- 2 eggs (try for organic if you can)
- 2 tablespoon olive oil
- 2 tablespoons goat cheese
- 1/4 cup baby spinach
- 2 tablespoons lemon juice
- salt & pepper
Make it!
- Lay slices of bread on a cutting board. Using a heart shaped cookie cutter, punch out the center of each slice. Keep the cutout & the punched bread - you'll be using both.
- Heat a skillet with 1 tablespoon olive oil over medium to high heat.
- Add the bread 'frames'.
- Crack eggs & drop each in the center of each bread frame. Season with salt & pepper.
- Add the middle heart cutouts to the pan to toast a bit as the eggs cook.
- Flip egg frames + eggs with spatula & cook until the egg whites are opaque.
- In the meantime dress spinach with the remaining olive oil, lemon juice, salt & pepper (I find it easiest to dump all the ingredients in & to massage with my bare hands - it coats the leaves most evenly).
- Lay each bread frame on a dish. Top with a layer of crumbled (room temperature) goat cheese & some dressed spinach leaves. Finish it off by placing the toasted heart cutout on top. Serve with a kiss & enjoy.
