Immaculate Chicken Salad
- 1 lb grilled or baked chicken
- 1 large green (granny smith) apple
- 1/2 cup almond slices
- 2 tablespoons granulated garlic
- 1 tablespoon celery seed
- 1/4 cup olive oil
- salt & pepper
Make it!
- Chop grilled chicken & apples into small 1/4 inch pieces.
- Over low heat in a sauté pan lightly toast the almond slices (2-3 minutes).
- Combine chicken, apples, almonds, granulated garlic & celery seed in a bowl.
- Toss with olive oil (if it seems dry add some more!).
- Season with salt & pepper to taste.
- Serve over mixed greens tossed in balsamic dijon dressing (recipe below).
Balsamic Dijon Dressing Ingredients
- 1/2 cup balsamic vinegar
- 1/4 cup dijon mustard
- 1/3 cup olive oil
Make it!
Whisk all ingredients together until smooth.
