Jalapeño Scrambled Egg Tacos
I love tacos. We make them at least a few times a month if not weekly at our house. I like them all. It’s so fun to add a little this & that & build as you go & then eat with your hands! What I love even more is serving everything on a cutting board which means less dishes to wash (tiny win!). This week I’ve been making piece meal trips to the grocery store so there hasn’t been a whole lot to work with when I conjured up this idea of egg tacos. We had eggs so that is what went in the tacos. I don’t love scrambled eggs but in these tacos I did.
Regardless, I would make these again for breakfast, lunch or dinner. These would actually be really fun for a brunch party. They’re simple & tasty & most importantly fun to eat!

Crispy Beer Battered Fish Tacos
I’ve recently been really into cooking cod. I mainly pick it up from the super market because it’s wild caught & on sale - win win. We love tacos at our house. They’re fun to eat & to make & I can’t wait to make these again. They’re fried, yes but it’s fish - that makes it healthy right? Regardless they're super pretty & taste AMAZING & the textures are just soooo good.

Fish Tacos
Who doesn't love tacos? When we were in Hawaii for our honeymoon I ate fish tacos at least once a day.
Chris loves sushi & seafood but he usually opts out of cooked fresh fish. These fish tacos are great way to get him to eat fresh fish.
I used this recipe with some fresh tilapia for my fish tacos. The key is to prepare the marinade ahead but to only marinate the fish for 15-20 minutes max, otherwise the lime juice will start to "cook" the fish. The best part is that you get tons of flavor in just a short amount of time & since it's a marinade you don't have to spend a bunch of time mastering your knife skills - chunky & mismatched sizes are OK here!
I grilled whole wheat tortillas & topped with chipotle mayo, shredded cabbage, tomatoes & fresh baby spinach.
What's your favorite kind of taco?

A DIY Duble Duty Table Runner
For a fun dinner this weekend I served up shrimp and chicken tacos with a big spread of salsas, cheeses, avocado and hot sauces. Our urban living doesn't allow for us to keep lots of table linens but I thought ours needed something - that something was a parchment paper table runner.
This table runner served double duties as a catchall for food that dropped and as a way to label the food in a cute way.
Make your own table runner:
- Cut a piece of parchment paper long enough to cover your table lengthwise. Leave enough to wrap around the underneath of the table.
- Tape the paper underneath each end of the table holding it taut
- Finished by adding a center piece.
- Serve your food in colorful bowls or dishes and label your spread with a pencil right on the paper.
tip: Use pencil on parchment paper anything else will smear (yes, even sharpie).
