Baked Egg in an Avocado

Baked Egg in an Avocado. breakfast. lunch. how-to

I’ve seen this egg in an avocado thing all over social media & have wanted to try it for a while. Yesterday, while working from home (thank you snow day!) I was actually able to make it for lunch - being that I had access to  an oven & the ingredients I needed to make it. It’s really very simple. The most challenging part is balancing the egg inside the avocado but it’s ok if it spills out as long as you follow my steps for anticipating a mess :)

I’ve always had my avocados raw so I was hesitant to fix something that wasn’t broken. I still liked the avocado part but in a different way. It almost reminded me of a baked potato in some ways. Have you tried it? What does it taste like to you?

I will definitely make this again. I think it would be great as brunch appetizer if you want to show off in front of guests.

Better Home Cooking Basics:  Keep Ripe Avocados in the Fridge to Prevent Spoiling

To say that I’m obsessed with avocados would be an understatement. I eat them about 4 times a week, at least. I just can’t get enough of the creamy fruit (it’s a fruit it has a seed, a.k.a. a giant pit).

If you’re like me, you buy your avocados when they’re rock hard. You wait patiently for them to ripen on the counter, sometimes putting them in a paper bag to speed the process & then you feel them the day they are perfect for eating - firm but with a little bit of squish.  Suddenly you have 4 ripe avocados & only 24 hours in a day. Letting them rot & uneaten is a sacrilege & not an option. Don't worry, just chill them.  Yep, if you plan to eat them in the next few days, you can slow the ripening process by sticking them in the fridge so you can enjoy them all week! That is what I call a  tiny win for every avocado lover today!
