Mediterranean Chicken Wrap


I love Mediterranean food, if you haven't noticed.  This post is this week's recipes wrapped into one, literally. Sometimes if you don't feel like cranking the oven it becomes a sandwich kind of night, or in this case a wrap kind of night. Just because you didn't turn the oven on or use your stove top doesn't mean you have to sacrifice flavor. This Mediterranean chicken wrap proves just that.

Ingredients

  • 2 cups shredded rotisserie roasted chicken
  • 1 cup Israeli salad (get the recipe here)
  • 1/2 cup tzatziki sauce (get the recipe here)
  • 2 large spinach wraps
Make it!
  1. Using a store bought roasted chicken either pull the chicken apart using your hands or shred it using two forks. Reserve two cups in a bowl.
  2. Lay 1 large wrap flat on a cutting board.
  3. In the center of the wrap spread 1/4 cup of tzatziki sauce.
  4. Add 1 cup of chicken on top of the sauce.
  5. Top it all off with 1/2 cup of Israeli salad.
  6. Now it's time to channel your inner Chipotle burrito maker. If you've never done this before be nice to yourself & take your time. Fold the right side of the wrap in towards the center.
  7. Then fold the top & bottom in towards the center leaving the left side open.
  8. Roll the folded right side towards the left slowly while tucking everything in using both hands.
  9. Place seam side down & cut in half on an angle. (If that doesn't work for you, tear up the pieces of the wrap & toss everything in bowl, et voila you've got yourself a rustic salad.)
  10. Repeat for the second wrap for a lovely dinner for two.
  11. Serve with extra tzatziki sauce for dipping.
