Chris & I had this delicious white bean mash at Tre Voci. I couldn't stop thinking about it so I googled it & in seconds I was on my way to recreating Nigella Lawson's recipe. It's really tasty & is a great alternative to mashed potatoes.

Ingredients
- 1/4 cup olive oil (plus 2 teaspoons)
- 1 clove garlic, crush or rough chop
- 1 sprig Fresh Rosemary
- 1 lemon, zest & juice
- 3 cans white beans (I used cannellini beans beans & butter beans)
- salt & pepper to taste
Make it!
- Put the 1/4 cup olive oil in a saucepan, & mix in the garlic over medium heat.
- Add the whole rosemary sprig, if using, & the lemon zest and warm through.
- Remove the rosemary, but do not throw away.
- Drain the beans & rinse under a tap to get rid of the gloop & then add to the pan & warm through, stirring & squishing with a wide, flat spoon so that the beans go into a nobbly mush.
- Season to taste; some beans come saltier than others. If you want a more saucier mash add 1/4 cup of chicken stock & heat through.
- Garnish with reserved rosemary.
