Better Home Cooking Basics: #26 Poach Eggs up to 2 Hours in Advance; Place in a Bowl of Ice Water & Chill, Then Reheat for 1 Minute.
Since poaching eggs in my new thing, I’ve been doing some reading about them. One of the tips I found (via Bon Appetit Magazine) is that eggs can be poached up to hours ahead of time - which gives you plenty of time to perfect your eggs without an audience if you’re expecting company. Once they’re cooked to your liking remove them with a slotted spoon & gently place them in a bowl of ice water. This will stop the cooking process so your eggs don’t get over cooked. Save the water that you were poaching them in & then right before you want to serve them drop them heat up said water & drop the eggs back in to reheat them for about a minute. Remember to let them rest on a paper towel when you take them out so that any extra water is absorbed.
