Usually when I go grocery shopping I end up coming home with the usual suspects & fear that we'll just eat the same old stuff over & over again. When I saw the ground turkey in my fridge that I clearly bought out of habit I decided I'd make some meatballs & stuff them with smoked mozzarella. Yeah cheese. Mmm cheese makes everything better.

Ingredients
- 1 pound ground turkey
- 1 egg
- 1 cup Italian-style bread crumbs
- 1/4 cup grated Parmigiano-Reggiano cheese
- 1/4 cup chopped fresh flat-leaf parsley
- 1 Tbsp red pepper flakes
- 3 Tbsp cup milk
- 1 tablespoon salt
- 2 teaspoons fresh ground black pepper
- 1/2 cup fresh smoked mozzarella, cut into small cubes
- 3 tablespoons extra-virgin olive oil
Make it!
- Preheat an oven to 375 degrees F .
- Mix egg, bread crumbs, Parmigiano-Reggiano cheese, parsley, milk, salt, red pepper & black pepper in a bowl.
- Add turkey & mix until evenly blended.
- Then form into 1 3/4-inch meatballs.
- Make a hole in the meatball with your finger and place a cheese cube in the hole.
- Seal the meatball around the cheese & place on a baking sheet. If you find your hands getting too sticky keep a small bowl of water on the side & dip your fingers in it in between forming each meatball.
- Drizzle the olive oil over the meatballs.
- Bake in the preheated oven until the meatballs are no longer pink in the center, about 30 minutes.
- Serve with a light sauce like this one with some dark greens & pasta. Or a traditional (even jarred) marinara sauce.
