Read on for the recipe for this fun recipe I adapted from Food Network Magazine.
Ingredients:
- 1 cup refried beans (try Amy's Organic Refried Beans they lack the scary ingredients in some of the other cans you'll find)
 - 1 cup salsa
 - 2 tablespoons chopped pickled jalapeno peppers
 - 1 1/2 cups shredded cheddar cheese
 - 2 cups shredded romaine lettuce
 - 1/4 cup chopped fresh cilantro
 - 4 scallions chopped
 - 1/4 cup sour cream
 - 1 lime (zest & juice)
 - 1 package whole wheat pizza dough
 - 1 tablespoon olive oil
 - salt & pepper
 
- Pre-heat oven to 400 F or start up grill at high heat for about 5 minutes before cooking.
 - Roll out pizza dough on to pizza stone.
 - Drizzle pizza dough with olive oil.
 - Spread salsa, beans & jalapenos over pizza dough.
 - Top with shredded cheese.
 - Cook for 8-10 minutes.
 - In a small bowl stir sour cream & lime zest together.
 - In a large separate bowl toss lettuce, cilantro & lime juice together. Season with salt & pepper.
 - Remove cooked pizza from pizza stone, top with sour cream & spread lettuce mixture over top.
 - Cut into 8 pieces with pizza cutter.
