Lemon Herb Pistachio Pesto Ingredients:
- 1 cup of fresh basil leaves (tightly packed)
- 1 lemon (zest & juice)
- 1/4 cup shelled pistachios
- 3 tablespoons fresh parsley
- 1/4 cup olive oil
- salt & pepper
Simply blend all ingredients together in a food processor or blender until mostly smooth, season with salt & pepper. Serve on pretty much anything!
