Thanksgiving is Thursday! What are you making?
I feel like most people get so wrapped up in the planning surrounding the traditional meal that most forget about breakfast. So I'll remind you: you should probably plan to eat something for breakfast that will hold you over until the feasting starts mid afternoon. Hungry, or in my case hangry (so hungry I get angry) isn't a good look for anyone. My suggestion, apple cinnamon pancakes.

Ingredients (makes 8 servings)
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons butter, melted
- 1 apple grated
- 1 teaspoon cinnamon
Make it!
- In a large bowl, sift together the flour, baking powder, salt and sugar.
- Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
- Grate apple with a box grater.
- Add grated apple & cinnamon to mixture.
- Heat a non-stick frying pan over medium high heat.
- Use a 1/4 cup measure to scoop the batter onto the pan.
- Cook until the edges of each pancake forms small holes & the edge looks almost dry & then flip with a spatula.
- Brown on opposite side.
- Serve hot with a pat of butter & maple syrup.
