Nacho Pizza

The new & favorite way to make pizza in our house is on our pizza stone on the grill!

Read on for the recipe for this fun recipe I adapted from Food Network Magazine.

 Ingredients:
  • 1 cup refried beans (try Amy's Organic Refried Beans they lack the scary ingredients in some of the other cans you'll find)
  • 1 cup salsa
  • 2 tablespoons chopped pickled jalapeno peppers
  • 1 1/2 cups shredded cheddar cheese
  • 2 cups shredded romaine lettuce
  • 1/4 cup chopped fresh cilantro
  • 4 scallions chopped
  • 1/4 cup sour cream
  • 1 lime (zest & juice)
  • 1 package whole wheat pizza dough
  • 1 tablespoon olive oil
  • salt & pepper
Make it:
  1. Pre-heat oven to 400 F or start up grill at high heat for about 5 minutes before cooking.
  2. Roll out pizza dough on to pizza stone.
  3. Drizzle pizza dough with olive oil.
  4. Spread salsa, beans & jalapenos over pizza dough.
  5. Top with shredded cheese.
  6. Cook for 8-10 minutes.
  7. In a small bowl stir sour cream & lime zest together.
  8. In a large separate bowl toss lettuce, cilantro & lime juice together. Season with salt & pepper.
  9. Remove cooked pizza from pizza stone, top with sour cream & spread lettuce mixture over top.
  10. Cut into 8 pieces with pizza cutter.

the crust gets so crispy when you cook your pizza on a pizza stone on the grill - love it!
