Greek Salad Party Kebabs



At my work we celebrate A LOT. It's pretty awesome. One of the things we celebrate for sure is birthdays. Each team member draws a name at the beginning of the year and then is in charge of the festivities for the person she has drawn. This year I got Jess.  As part of the Jess-tivities, I wanted to serve some food.  We're mad snackers in our office and Jess might just wear the crown jewel in that department which she literally gets from her mama (Happy Mother's Day Elizabeth!).

Since we would be celebrating in the happier hours of the day I thought we could just something refreshing and savory that would also pair nicely with some lets-drink-wine-at-work-to-celebrate-your-birthday-wine. They're super easy to make. No cooking involved. All you need to know is how to chop, spear, stir and pour to make these fancy little party kebabs.

What you'll need:
  • grape tomatoes
  • red onion (chopped in large chunks that can be easily speared)
  • kalamata olives
  • feta cheese (cubed - buy the block not the crumbles)
  • cucumber (I used Persian cucks to cut down on the cutting - they're smaller and you just need to slice them into thick circles)
  • the zest and juice of a lemon
  • olive oil
  • dried oregano
  • salt & pepper
  • large fancy tooth picks

Make it!
  1.  Cut up your red onion, feta and cucumbers.
  2. Make an assembly line of your components (I used this order: cucumber-feta-onion-tomato-olive but you can do which ever you like).
  3. Spear one of each component onto your tooth pick and set aside.
  4. In a bowl add the zest of the lemon and it's juice. Add an equal amount of olive oil, a couple table spoons of oregano, salt and pepper and stir.
  5. Pour dressing over the top of your kebabs and serve with a side of tzatziki sauce. If you want to make it a heartier app you can also serve some pita on the side.
Tip #1: I let my kebabs marinate overnight in the fridge but you can serve them right away too.
Tip #2: Ditch the tooth picks and toss it all in a bowl to make a colorful salad for lunch or dinner!
