Best Ever Turkey Chili

Best Ever Turkey Chili recipe

Apparently the mild 50 degree weather we had this past weekend was all a delicious dream because it’s cold again! So warm up with this chili recipe that I found & have been making all winter (when I'm not making this one). It has some really great flavors (spoiler alert - there's cinnamon & beer in there!). The best part is that it’s a pretty quick cook so you don’t have to let it simmer for hours but I’m sure if you have that kind of time in your day it will only taste better & better the longer it cooks - but it tastes great right off the bat. Naturally, I bulk mine up with extra veggies - so I’ll note in the directions which are optional.



Ingredients (recipe adapted from Kat Martinelli’s recipe on food52.com)
  • Olive oil
  • 1 medium-large onion, chopped
  • 5 cloves garlic, minced
  • ½ red bell pepper, chopped
  • 1 teaspoon chili powder
  • ½ teaspoons hot paprika (I used regular paprika)
  • ½ teaspoons dried coriander
  • ¼ teaspoons oregano
  • Dash of cinnamon
  • 1 pound ground turkey breast
  • 1 cup dark beer such as Leffe Brown (I used whatever was in the fridge - I think it was Shock Top!)
  • 28-ounce can diced tomatoes
  • 15½-ounce can kidney beans, drained (I used pinto beans)
  • 2 tablespoons tomato paste
  • 1/2 teaspoon hot sauce or chile paste (I sided with sriracha for this one)
  • 1 cup frozen corn (optional)
  • 3 big handfuls of baby spinach or baby kale (optional)
  • Salt and pepper
  • toppings: shredded cheese, greek yogurt or sour cream, chopped cilantro or parsley (optional)
Make it!
  1. Heat a bit of olive oil in a large pot over medium heat. Add the onion, garlic, and red pepper and cook, stirring occasionally, until softened. Add the chili powder, hot paprika, coriander, oregano, and cinnamon; stir and allow to cook until aromatic, 1 minute.
  2. Add the ground turkey and cook, breaking up with a spoon, until lightly browned. Pour in the beer and allow to cook down slightly.
  3. Add the tomatoes, beans, tomato paste, and spicy paste or hot sauce. Season with salt and pepper.
  4. Allow to simmer, uncovered, until thickened, about 20 minutes. At the 10 minute mark add your corn & greens in.
  5. Top with your choice of toppings like shredded cheese, greek yogurt or sour cream, chopped cilantro or whatever you desire.
