Shaved Zucchini, Asparagus & Pea Salad

I think the easiest way to make something look and taste fancy is with a vegetable peeler. No. Really it's true.  This salad looks so fancy pants your dinner guests will never know that it was so easy to make!

Salad Ingredients:
2 zuchinis
1 bunch of fresh asparagus
1/2 a large shallot
1 box of frozen peas
salt & pepper

Salad Dressing Ingredients:
1/2 a large shallot
1/4 cup rice wine vinegar
1/4 cup apple cider vinegar
1/2 cup olive oil
1 tablespoon sugar
salt & pepper

Make it:
  1. Wash all of your produce.
  2. Cut 1/2 a large shallot into thin strips and set aside.
  3. Using a vegetable peeler create large ribbons of the zucchini by running the peeler from top to bottom in one long strip. Stop and rotate when you hit the seeds.
  4. Lay the shaved zucchini on layers of paper towel to absorb moisture.
  5. Bring a pot of water to a boil.
  6. Cut the woody end off the asparagus. Cut the remaining stalk into two inch pieces.
  7. Blanch the asparagus in salted boiling water for 1 minute.
  8. Remove immediately and place asparagus pieces in a bowl with ice and water.
  9. Add frozen peas to the ice bath and set aside.
  10. Drain peas and asparagus after 5-7 minutes.
  11. In a food processor blend the vinegars, olive oil, sugar, remainder of the shallot and salt and pepper until smooth. Please note: this recipe will make more than enough dressing so start by only using half.
  12. In a large bowl for serving toss together the zucchini ribbons, the asparagus, the peas, the shallots and about 1/2 of the dressing. Serve immediately.
