Baked Sweet Potato Fries with a Creamy & Spicy Dipping Sauce

Chris doesn’t like sweet potatoes but he liked these! (Tiny win!!) I found these purple & white sweet potatoes in my regular super market. Maybe it was mind over matter that made Chris enjoy these more than he usually does or maybe it was the addictive dipping sauce that we ate along with them. Or maybe it was because I called them “fries”.  Whatever it was I’ll take it & will be making these again (similar to the method I used to make these home fries).

Ingredients for Fries:

  • 3-4 sweet potatoes
  • 2 teaspoons salt
  • 2 teaspoons paprika
  • 2 teaspoons garlic powder
  • 1/2 teaspoon black pepper
  • 3 tablespoons olive oil

Ingredients for Dipping Sauce:
  • 1 cup greek yogurt
  • 1 lime, zest & juice
  • 1/2 teaspoon cayenne pepper (or more)
  • 1/2 teaspoon salt
  • 2 tablespoons honey

Make the Fries!
  1. Pre-heat oven to 425.
  2. Cut potatoes into long strips about 1/4 inch wide. Make them all the same width so that they cook at the same rate.
  3. Place raw fries into a pot & cover with water just enough to cover the potatoes - not any more, throw in a pinch of salt. Bring to boil & cook for 3 minutes.
  4. Drain potatoes & pat dry.
  5. In the mean time mix all of the spices (salt, paprika, garlic powder, black pepper) together in a small bowl. You won’t use it all - you can keep any extra in an airtight container to use again.
  6. Move potatoes to a large mixing bowl.
  7. Drizzle olive oil all over & then toss (carefully the potatoes will already be pretty soft) with the spice mixture.
  8. Spread seasoned fries out on baking sheets. Don’t overlap or overcrowd the fries that will cause them to steam not crisp up - which is the texture I prefer.
  9. Bake in the oven for 30-40 minutes or until the outside are crisp. Turning/flipping once in between to make sure all sizes get crispy. You can use a spatula or a pair of thongs to to this.
  10. Serve fries hot with dipping sauce (see below for dipping sauce instructions).

Make the Dipping Sauce!
  1. Mix all the ingredients together in a small-medium sized bowl.
  2. Serve with fries.
  3. Store extra in an airtight container in the fridge.
