Immaculate Chicken Salad

I used to make this salad all the time at my collegiate coffee house job at Immaculate Consumption (man, I miss that place).  My gal Maggie recently reminded me of it. So naturally, I had to make it.  It's a great take on chicken salad full of crunch & flavors & is mayo-free!  You can eat it served between some lettuce, tomato, a slice of provolone (like Immaculate) & bread as a sandwich or over some lightly dressed greens as a salad.  Click through to get this yummy recipe plus a bonus salad dressing recipe that really makes it sing in your salad!

Immaculate Chicken Salad
  • 1 lb grilled or baked chicken
  • 1 large green (granny smith) apple
  • 1/2 cup almond slices
  • 2 tablespoons granulated garlic
  • 1 tablespoon celery seed
  • 1/4 cup olive oil
  • salt & pepper

Make it!
  1. Chop grilled chicken & apples into small 1/4 inch pieces.
  2. Over low heat in a sauté pan lightly toast the almond slices (2-3 minutes).
  3. Combine chicken, apples, almonds, granulated garlic & celery seed in a bowl.
  4. Toss with olive oil (if it seems dry add some more!).
  5. Season with salt & pepper to taste.
  6. Serve over mixed greens tossed in balsamic dijon dressing (recipe below).

Balsamic Dijon Dressing Ingredients
  • 1/2 cup balsamic vinegar
  • 1/4 cup dijon mustard
  • 1/3 cup olive oil

Make it!
Whisk all ingredients together until smooth.
