Grilled Chicken Sandwiches with Goat Cheese, Spinach, Caramelized Onions & Mushrooms


I know it may appear that we never repeat the same meal in our house - but here’s a secret- we do! Since chicken is kind of blah (I’m bored with it just thinking about it) I find it is more exciting when it’s sandwiched in between some deliciously charred bread & smothered with toppings. Then it’s almost like you’re not eating the chicken at all. What’s even better is that you can make these sandwiches with simple ingredients & you get to eat them with your hands!

Ingredients for two sandwiches

  • 1/2 loaf roasted garlic ciabatta bread
  • 2 thin chicken breasts (organic if you can!)
  • 2 cups mushrooms, sliced
  • 1 small onion, sliced
  • 3 cups baby spinach
  • salt & pepper
  • olive oil
  • goat cheese
Make’em!
  1. Pre-heat a large grill pan over medium-high heat. If you don’t have a grill pan use a large skillet.
  2. In an additional skillet heat 1-2 tablespoons of olive oil over medium heat. Add onion & mushrooms. Cook until the mushrooms start to brown & the onions wilt. After about 5 minutes season with salt & pepper.
  3. Continue cooking the onions & mushrooms until the onions are golden in color as are the mushrooms.
  4. While the veggies caramelize, season the chicken with salt & pepper.
  5. Massage some olive oil on to the chicken (maybe like 1 tablespoon per piece).
  6. Grill the chicken for 5 minutes on each side or until cooked through. Let rest on the side.
  7. Cut the ciabatta bread in half length-wise & then in half again into two sandwiches.
  8. Drizzle each quarter with olive oil.
  9. Place on the grill pan oil side down & grill for 2-3 minutes.
  10. Flip the bread pieces over & grill for another 2-3 minutes on the other side.
  11. Using tongs transfer the bread to a cutting board where you can prepare the finished sandwiches.
  12. Add the spinach to the mushroom & onion mixture. Season with salt & pepper & let cook until wilted.
  13. Smear some goat cheese on each piece of the bread - spread it like butter.
  14. Then add some of the veggie mixture to the bottom bread of the sandwich.
  15. Add a piece of chicken on top.
  16. Add more of the veggies on top of the chicken & close the sandwich with the other piece of bread.
  17. Stick two giant tooth picks into each sandwich & cut on a diagonal & enjoy!

  1. It almost seems as if the chicken is in the way, what with all the other yummy goodness going on. Definitely giving this a try. A perfect sandwich!
