Smoked Mozzarella-Stuffed Turkey Meatballs


Usually when I go grocery shopping I end up coming home with the usual suspects & fear that we'll just eat the same old stuff over & over again.  When I saw the ground turkey in my fridge that I clearly bought out of habit I decided I'd make some meatballs & stuff them with smoked mozzarella. Yeah cheese. Mmm cheese makes everything better.

Ingredients

  • 1 pound ground turkey
  • 1 egg
  • 1 cup Italian-style bread crumbs
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1/4 cup chopped fresh flat-leaf parsley
  • 1 Tbsp red pepper flakes
  • 3 Tbsp cup milk
  • 1 tablespoon salt
  • 2 teaspoons fresh ground black pepper
  • 1/2 cup fresh smoked mozzarella, cut into small cubes
  • 3 tablespoons extra-virgin olive oil

Make it!
  1. Preheat an oven to 375 degrees F .
  2. Mix egg, bread crumbs, Parmigiano-Reggiano cheese, parsley, milk, salt, red pepper & black pepper in a bowl.
  3. Add turkey & mix until  evenly blended.
  4. Then form into 1 3/4-inch meatballs.
  5. Make a hole in the meatball with your finger and place a cheese cube in the hole.
  6. Seal the meatball around the cheese & place on a baking sheet. If you find your hands getting too sticky keep a small bowl of water on the side & dip your fingers in it in between forming each meatball.
  7. Drizzle the olive oil over the meatballs.
  8. Bake in the preheated oven until the meatballs are no longer pink in the center, about 30 minutes.
  9. Serve with a light sauce like this one with some dark greens & pasta. Or a traditional (even jarred) marinara sauce.
