Baked Root Vegetable Frites



Yesterday, I posted about mussels. Other than great bread to soak up the yummy sauce you should definitely eat them some some sort of "frites."  Instead of your traditional pomme frites (potato french fries), Chris & I munched on a tasty alternative: root vegetable frites.

Lately, I'm trying cook more with coconut oil. It's a bit lighter then olive oil & has some really great benefits too - whether you eat it or rub it on like a body lotion - it can help boost your immune system, help you to lose weight & does wonders for skin care. Ingredients:
  • 1 sweet potato
  • 2 large carrots
  • 2 large parsnips
  • 1/4 cup ground almonds
  • 2 tablespoons coconut oil
  • salt & pepper

Make it!
  1. Pre-heat oven to 400.
  2. Peel all vegetables & cut into even sized match sticks.
  3. Place coconut oil in an oven safe bowl & place it in your preheating oven for about 1 to 2 minutes. Coconut oil is solid at room temp so heating it a bit will make it look & act more like traditional oils like olive oil.
  4. Toss veggies, coconut oil, ground almonds, salt & pepper together. Spread in an even layer on a baking sheet.
  5. Bake for 30-45 minutes or until the veggies are tender.
